INGREDIENTS
  • 64oz Seafood Stock
  • 4 Lobster Tails
  • ½ cup Heavy Whipping Cream
  • 3 table spoons All Purpose Flour
  • 2 table spoons Minced Garlic
  • 3 table spoons Tomato Paste
  • 3 table spoons Butter
  • 3 table spoons Seafood Seasoning
  • 2 cups Mirepoix Style Blend (Kroger/Walmart Brand)
  • 1 table spoon Olive Oil
  • 1 table spoon Green Onion for Garnish
INSTRUCTIONS
  1. Prep lobster tails by using kitchen shears to make a cut straight down the back of the lobster to make opening them easier in later steps (see video for further instruction).
  2. Bring seafood stock to a boil, add 1 table spoon of seafood seasoning, and add lobster tails cooking 6-8 minutes or until lobster is done.
  3. Remove lobster tails from stock and set aside to cool. Save seafood stock as well for next steps.
  4. Cut the cooled lobster tails into bite size pieces (about the size of a dime).
  5. Saute butter, oil, and mirepoix (carrots, onion, and celery) until vegetables are translucent.
  6. Next add garlic, tomato paste, and flour to the vegetables until the mixture becomes a paste in about one to two minutes.
  7. Next add stock from earlier and bring to a boil.
  8. Remove from heat
  9. Use an immersion blender to blend all of the vegetable chunks until you have a smooth consistency. Be careful as the mixture is hot and can cause burns if not handled properly.
  10. Bring back to a boil.
  11. Next add lobster into your mixture, 1 table spoon of seafood seasoning, and heavy whipping cream and stir to mix.
  12. After the bisque is mixed, remove from heat and let cool for 5 minutes or so before serving. Garnish with green onion and serve warm.
