What is a seafood boil?

A seafood boil is a social and culinary tradition deeply rooted in the coastal regions of America. Whether it’s the Cajun crawfish boils of Louisiana or the clam bakes in New England, a seafood boil is essentially a feast of various types of seafood cooked together in a large pot, usually with a flavorful broth, spices, and various additions like corn, potatoes, and sausage. It’s a communal event, a feast meant to be shared with friends and family, spread out on a table for everyone to enjoy.

Tips to Remember

Before you dive into making your seafood boil, keep these tips in mind:

  • Seafood can vary greatly in cooking times. Shrimp cooks faster than crab legs, which in turn cook faster than potatoes. Layer your ingredients in the instant pot based on cooking time, with the ingredients that take the longest at the bottom.
  • Choose any variety of crab. King crab or snow crab work best.
  • If you don’t have baby potatoes available, cut your regular potatoes in half and use them.
  • Be sure to monitor your Instant Pot and quickly release the pressure to prevent overcooking.
  • If you prefer mildly spicy sausages, feel free to use your favourite type.
  • The secret to a flavorful seafood boil is in the seasoning. Use a combination of seafood boil seasoning, like Old Bay, along with your own mix of preferred spices.
  • We have used chicken stock for this recipe, but you can use any stock available. If you love the oceanic flavours, add seafood broth. For a more mild and more neutral flavour, add vegetable broth.

Variation ideas

The beauty of a seafood boil is how flexible it is. Here are a few variations you can try:

  • Lobsters: Lobsters can be a luxurious addition to your seafood boil. Adjust the cooking time accordingly, as lobster can become tough if overcooked.
  • Clams/mussels: These shellfish can add another dimension of flavour and texture to your seafood boil. Clean them thoroughly and discard any that are not tightly closed before cooking.
  • Fish: You can add chunks of hearty fish like salmon, halibut or swordfish to the mix.
  • Mushrooms: For a non-traditional twist, why not add some mushrooms? Their umami flavour can complement the seafood beautifully.
  • Vegetables: Beyond the traditional potatoes and corn, you can also add other vegetables. Try some hearty root vegetables like carrots or even some bell peppers for a bit of sweetness and colour.

What to serve with a seafood boil?

The beauty of a seafood boil is that it’s an all-in-one dish. But if you’re looking to round out your meal further, here are a few ideas:

  • Garlic bread: The buttery, garlicky crunch of garlic bread makes it the perfect accompaniment to a seafood boil. It’s great for mopping up all those delicious juices!
  • Cornbread: Another classic addition, cornbread would pair wonderfully with a seafood boil. Its sweet flavour complements the spicy, savoury seafood perfectly.
  • Coleslaw: A tangy, refreshing coleslaw can provide a nice contrast to the hearty seafood boil.
  • A simple salad: A simple green salad dressed with a light vinaigrette can be a great way to balance the richness of the seafood boil.
  • Potato salad: the creaminess of the potato salad works well with everything, and it includes seafood boil as well!
  • Vegetables: you can also serve this seafood boil with roasted or grilled vegetables like asparagus, sweet potato, green beans or zucchini, etc.
